Almost 5 Ingredient Pizza Spaghetti Pie

20140114_205721-001I am going to share a secret with you – I make this recipe at least once a month, probably more than that actually, but I don’t want to admit it to myself that I indeed have a problem. The recipes comes from another one of my favorite food blogs – paleomg.com. This pizza spaghetti pie is so delicious that I guarantee you family, even the little ones, will ask for more and lick their plates. What’s even better is it’s really only 5 ingredients! What!? Yes, only 5 (with spices, but they don’t count). PLUS, for those who love pizza, but can’t handle the cheese, this recipe is perfect for you. The first time I made this for my family, they wouldn’t believe me there was no cheese!

Ingredients
• 1 large spaghetti squash
• 1 pound italian sausage (I have also use chorizo or plain ground beef or turkey)
I haven’t tried it, but I believe the meat could be omitted if you would like to make this a vegetarian dish.
• 1/2 medium onion, diced
• 1 cup pizza sauce (aim for low salt and no sugar)
• 1 teaspoon dried basil
• Salt and pepper to taste
• 3 eggs, whisked
Optional: extra pizza seasoning such as oregano and garlic powder, plus your favorite pizza toppings like veggies, or even cheese.

Preparation

1. Preheat oven to 400 degrees
2. Prepare the spaghetti squash.
You will need to roast the squash either whole or cut in half. This can be done ahead of time, in fact I recommend it if you don’t have a lot of time in the evenings, cook the squash in the morning while you are getting ready, then you can assemble the whole meal in the evening. While I love to eat them, it can be very tricky to cut them open. You have too options for roasting: first, you can pop it in the microwave for 3-4 mins until it softens a little, cut in half, and remove seeds or poke small holes all the way around  the squash with a sharp knife and roast it whole.
3.If roasting halves, cook for 25-30 mins. If roasting a whole squash, cook for 60-90 minutes.
4. Once squash is finished remove oven. If you roasted it whole, wait until it cools a little to cut in half and remove the seeds.
5. Remove the threads of the squash and place it in a greased 8 x 8 or larger baking dish or if you are making the dish later, put it in a sealed container it put it in the fridge.
6. Reduce the oven temperature to 350 degrees
7. In a large pan over medium heat cook the italian sausage (or meat choice) and onion until meet is no longer pink and is crumbled. If you are adding other vegetables, you would cook them now, once the meat is done. Saute them for a few minutes.
8. Add your pizza sauce, and dried herbs to the pan and mix well.
9. Add sausage mixture to dish with spaghetti squash threads and combine well.
10. Lastly, add in the whisked eggs to baking dish and mix it all. You want to not be able to see the eggs any more.
11. Put it in the oven and cook for at about 1 hour or until you see a crust form on the top that doesn’t given when you press on it. If you want to add cheese, now would be the best time to sprinkle some on top and cook for just a few more minutes, or until it begins to bubble.
12. Once finished, take it out and let it rest for 5 mins before serving.

I enjoying serving this pizza pie in a block slice form with either a side salad or my favorite green vegetable. This recipe makes about 3-4 servings, but I have stretched it to more.
