The HARDBODY “Just Right” Omelet

I don’t know if you have a signature food that you stamp as yours, but the omelet is by far, the most versatile food that I (or your) could just about put anything in. I’ve adopted the vegetarian lifestyle for a while, but for the last few weeks I have consciously had no chicken or beef. I cut the beef out a while back, but the edible bird was the last to go. So without that added bit of protein that I typically receive from meats, I now rely heavily on fish (not every fish), eggs, nuts and everything under the sun to make up the difference. That’s a whole different topic. Where am I going with this..oh, the omelet! So I have fun with the omelet and whenever you need some veggies and protein, think about this Organic Baby Spinach and egg white omelet with celery and blueberries. You’ll get your protein, veggies and a handful of low glycemic index (GI) fruits that will keep you satiated and not craving for more in 10-15 minutes. Make cooking fun again!!
